Chicken with Apricots and Chickpeas by Annabel Karmel

Ingredients

  • 1 tbsp olive oil

  • 100g onion, chopped

  • 60g red pepper, chopped

  • 150g carrot, peeled and diced

  • 5g grated ginger

  • 15g dried apricots, chopped

  • 250g chopped tomatoes

  • 1 tsp garam masala

  • 75g chickpeas

  • 150g chicken thighs, diced

  • 200g chicken stock

  1. Heat the oil in a saucepan. Add the onion, red pepper, carrot and apricots. Fry for a few minutes.

  2. Add the chicken, garam masala and ginger and fry for 2 minutes.

  3. Add the chopped tomatoes, stock and chickpeas. Bring up to the boil. Cover and simmer for 20 minutes until tender.

  4. Blend to the desired consistency using a hand blender.
