Ingredients

  • 2 eggs

  • 175ml milk

  • 2 tbsp caster sugar

  • 150g cottage cheese

  • 1 tsp vanilla extract

  • 200g plain flour

  • 50g rolled oats

  • 2 tsp baking powder, (preferably a low sodium version)

  • 150g blueberries

  • Oil or butter to grease the pan

  • Serving suggestions: Summer berries and chopped banana or maple syrup to serve

Whisk together the eggs, milk, cottage cheese, sugar (or agave) and vanilla extract.

In a separate large bowl place the flour, oats and baking powder.  Mix well before stirring in the egg and milk mixture. Once combined, fold in the blueberries

Melt a little butter in a non-stick frying pan.

Drop spoonful of mix into the pan.  You will get 3 or 4 pancakes per batch. When bubbles start to form on top, flip and cook on the other side for 2 minute then serve in stacks with summer berries, chopped bananas or maple syrup.

TOP TIP: Get your kids to whisk up the batter, it might get a little messy but it’s great fun.
